Recipe of the month
Chicken JambalayaMy brother who has lived his life in Louisiana has perfected the traditional Cajun recipes, Jambalaya being one of them. You can mix it up with adding sausage or make a seafood version with mussels, crab, oysters etc.
Salt
Pepper
Flour - enough to coat chicken
3 tablespoons fat (these are traditional recipes, ingredients like fat make it taste good. If you must just use oil or butter)
3 large onions, chopped
5 ribs celery, chopped
2 cloves garlic, chopped
¼ capsicum (bell pepper), chopped
2 cups rice, washed
1 can beer
2 ½ cups water
2 teaspoons salt
Cut chicken into serving pieces. Season well with salt and pepper. Coat well with flour. Melt fat in an iron skillet or heavy pot. Fry chicken until brown, then remove from skillet.
To the fat add the onions, celery, garlic and capsicum (bell pepper) and cook until wilted. Put the chicken back in the skillet and cover. Cook slowly until the chicken is tender (about 30 minutes).
Add rice to chicken. Stir thoroughly for 2 or 3 minutes. Pour beer over mixture and stir thoroughly. Add salt and cook slowly (about 30 minutes) until rice is cooked. Serves 6.

The other recipe of the month
Lamb Stew
1 ½ kilos cubed lamb
6 cups water
4 medium potatoes cubed
3 medium onions sliced
3 carrots sliced
3-4 cloves garlic chopped
2 teaspoons chicken stock
½ teaspoon salt,
½ teaspoon freshly ground pepper.
1 ½ teaspoons fresh thyme or ½ teaspoon of dry.
3 tablespoons olive oil
In a large saucepan - a heavy one if possible or Dutch oven, heat olive oil and add chopped garlic, onions and stir until golden.
Add lamb and toss until lightly brown.
Reduce heat; add water, stock and thyme.
Put on lid and simmer for 1 ½ hours slowly. Test for seasoning and adjust as necessary. Thicken with 2 tablespoons cornflower mixed to a paste with water.

The story behind Mums Recipes
My Mum or Mom put together a cook book full of her all time great recipes. Mum printed the book at her expense and gave them to my sister and I at University to raise a little extra cash to help us through our student "poverty" years. We were more interested in partying though, so I have spent the last 13 years giving the books away to the delight of my friends. So I thought I'd put in some effort to spread the good word and show Mum that I always intended to pay her back for her efforts. So this is kudos for Mum! For decades the recipes have wooed and entertained our family and friends. The recipes are for the most part easy to cook, have a dab of flair and are relatively healthy without getting too carried away. Search, select, print, cook and eat. Not too difficult - enjoy.
